You need a rooted device to record communications on most newer phones, there is code in the OS that prevents communications with others from being recorded
Also, I think barigato ment you should get a sepzelote device to record the other device that the stuff you want is on, not record using the same device its on.
One device records, while the other device displays what you want to record.
The fact it's an iOS device makes it even harder to do though... the only other thing I could think of that would work would be to get a program that can mirror the display and control your phone, then use something like OBS to record it.
